Bún cá dọc mùng (bạc hà) là món ăn sáng yêu thích của nhiều người. Vị món bún chua chua, cay thơm hấp dẫn cùng thịt cá chiên béo bùi ngon miệng. Cuối tuần rảnh có thể nấu và thưởng thức cùng cả nhà đi nào.
Cà chua, hành lá, rau răm, bạc hà (dọc mùng) rửa sạch. Sau đó đem cà chua cắt múi cau, dọc mùng cắt vát, hành lá, rau răm, thì là cắt khúc.
Cá rô phi đánh vảy, phi lê rồi cắt khúc khoảng 3-4 cm, phần đầu cá bỏ nồi nước luộc rồi đem giã lọc lấy nước cốt.
Đặt chảo lên bếp, phi thơm cà chua với hành tím với 1 muỗng canh dầu ăn, thêm cà chua vừa xào vào nồi nước dùng đun nhỏ lửa. Nêm 2 muỗng cà phê hạt nêm, 1 muỗng cà phê đường.
Ở một chảo khác, thêm nhiều dầu vào đun nóng già rồi cho cá rô phi rán vàng giòn 2 mặt, gắp cá qua lớp giấy thấm dầu xếp lên đĩa.
Đặt nồi nước dùng lên bếp đun sôi thêm vài lát gừng cùng phần cà chua vào xào đun sôi, nêm nếm gia vị vừa miệng. Khi canh sôi hạ lửa thêm chả cá và dọc mùng vào.
Chần bún bằng nước nóng rồi cho vào bát tô, xếp chả cá, cá chiên giòn cùng dọc mùng và hành lá, rau răm, thì là. Từ từ chan phần nước dùng vào thưởng thức khi bún cá còn nóng hổi.
